Chips & Nibs Chocolaty Cinnamon Cookies

Cinnamon cookies with dark chocolate chips and carob nibs
  • 1 cup butter, room temperature
  • 1 ½ cups organic cane sugar
  • 1 egg, slightly beaten
  • 1 ½ tbsp. molasses
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • ¼ tsp salt
  • 1 cup dark chocolate chips
  • ½ cup raw carob nibs
  1. Preheat oven to 350 degrees.
  2. In bowl of a stand mixer, cream butter.
  3. Add sugar and process until light and creamy.
  4. Mix in slightly beaten egg and molasses until thoroughly combined.
  5. In a separate bowl, combine flour, baking soda, cinnamon, and salt.
  6. In batches, add flour mixture to wet ingredients, blending between each addition.
  7. Once thoroughly combined, stir in chocolate chips and carob nibs.
  8. Drop by rounded teaspoon full onto ungreased cookie sheet.
  9. Bake 10-12 minutes or until edges are golden brown.
  10. Remove from oven and allow to sit for 2 minutes before transferring cookies to wire rack.
