Friends With Benefits Cobbler (or Black Raspberry & Vanilla Bean Cobbler)
 
Ingredients
  • 2½ cups fresh black raspberries
  • 1 cup sugar
  • 1 - 2 whole vanilla pods, split and scraped (Visit here for instructions on how to open and use vanilla pods)
  • 1 cup flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ½ cup butter, melted
Instructions
  1. Stir berries and sugar together in a bowl and let stand for about 20 minutes.
  2. In the meantime, preheat oven to 375 degrees and split and scrape vanilla pod(s).
  3. In a large bowl, whisk flour, baking powder, salt. Add milk, vanilla, and melted butter. Whisk until combined.
  4. Pour batter into ungreased 8x8 baking pan. Evenly spoon prepared berry mixture over batter.
  5. Bake for approximately 45-55 minutes or until dough rises and turns golden brown.
  6. For best results, serve warm with a generous topping of whipped cream or ice cream.
