Sunshine Waffles - Jan 9th, 2015

My wife and I love weekend brunches. We try to make a point of having at least one hearty brunch meal on the weekends. One of our favourite things to make for brunch are waffles topped with fresh fruit, homemade whipped cream, and of course a generous amount of Canadian maple syrup!

Now admittedly, we bought our first waffle iron just last year. Prior to that, we would periodically pick up a box of waffles from the frozen food aisle. My wife had always wanted to try making waffles though, so when we found a waffle iron on sale at a rock bottom price, we grabbed it up. Now fresh waffles are a staple on our brunch menus. We like experimenting with different flavours, but our go-to is a basic waffle recipe brightened with cinnamon and orange zest.


Sunshine Waffles
  • 2 eggs, separated
  • 2 cups all purpose flour
  • 1¾ cups milk
  • ½ cup vegetable oil
  • 1 tbsp white sugar
  • 1 tbsp brown sugar
  • 4 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • grated peel of one orange
  1. Separate egg yolks and whites. Set egg whites aside. Beat yolks until smooth. Add oil and milk, mix to combine. Add remaining ingredients and blend until just smooth. Beat egg whites until stiff peaks form. Gently fold egg whites into batter.
  2. Drop approximately 1 cup of batter onto preheated waffle iron. Let cook for about 5 minutes or until waffles are golden brown. Serve immediately with your favourite toppings. We suggest: fresh whipped cream, berries, Canadian maple syrup, and butter!
  3. Makes approximately 4 large waffles.
