Sunshine Waffles
  • 2 eggs, separated
  • 2 cups all purpose flour
  • 1¾ cups milk
  • ½ cup vegetable oil
  • 1 tbsp white sugar
  • 1 tbsp brown sugar
  • 4 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • grated peel of one orange
  1. Separate egg yolks and whites. Set egg whites aside. Beat yolks until smooth. Add oil and milk, mix to combine. Add remaining ingredients and blend until just smooth. Beat egg whites until stiff peaks form. Gently fold egg whites into batter.
  2. Drop approximately 1 cup of batter onto preheated waffle iron. Let cook for about 5 minutes or until waffles are golden brown. Serve immediately with your favourite toppings. We suggest: fresh whipped cream, berries, Canadian maple syrup, and butter!
  3. Makes approximately 4 large waffles.
